Berries for your breakfast.



I really like berries on my breakfast, no matter wether it is chiapudding, oats or Nice creamy coconut yoghurt.
I also really like when the berries are whole and still taste like berries.
I only use 15 gr of sugar for 100 gr of berries and at this time of the year i use frozen berries

How to do:
100 gr of frozen berries
1/2 lemon zest and juice
15 gr sugar


If you are bigger family, then the recipe is:


200 gr frozen berries (most frozen berries comes bags of 200 gr)

1 lemon, zest and juice

30 gr of sugar

Put the berries in a glass jar pour over sugar, zest and juice and leave in the fridge till the next morning
Pour everything into a pot, and slowly heat to boiling point, let it simmer for 2 min. And it is ready to use.
Keep it in the fridge for up till 5 days.


This recipe is good for berries like blackcurrent, blackberries, raspberries, blueberries and small strawberries

Granola (GB)

Granola
Homemade granola with oliveoil and sweetened with apples.

Recipe:
3 dl of oats
1 dl buckwheat
1 dl sunflower seeds
1 dl sesame seed
2 dl almonds and/ or hazelnuts
2 apples grated (2-3 dl)
20 gr ginger, grated.
1 dl olive oil
1 tsp salt
2 tsp cardemomme or cinnamon.


Mix all well together and roast in the owen for 40 min (at 180 C) in total stir every 10 min maybe more often at the end.


Let it cool completely before putting it into a jar or glass with lid.

I tasted and bought the oliveoil from#bonaminiresently and i really like it, so i am trying to find different ways to use it.

Pumpkin soup (GB)

Automn soup 🎃

Good, nourishing and warming soup, so easy to make and with good proteins

For two

1/2 hokkaido app 350 gr
1 dl red lentils
1 clove garlic

Opp. ½ onion i dices 
1 tbsp of turmeric
20 gr of fresh ginger or 2 tsp dried ginger
Black pepper
1 tsp nigella seeds
1 tsp cummin seeds
2 tbsp Olive Oil
1/2 l water
Salt & pepper
If you like it spicy you can add some fresh red chili
If like the to be more smooth and with extra calories add coconutmilk

For topping
1 sweet potato in cubes
1 tsp of cummin
1 tsp turmeric
2 tbsp Olive Oil
Salt and pepper.

Add Oil to a pan, at medium heat, add lentils, spices, garlic and ginger
Let fry for a few minutes, then add the hokkaido (and chili), again let fry for 3-4 min, stir.
Add app 1/2 liter of water, let everything boil for app 15 min until hokkaido is tender.

While soup is simmering then make potato cubes.

Add everything to a tray, bake it for 15 min at 200 C

When the hokkaido is tender
Take it of the heat, let it cool a little then blend until smooth, if you want coconut milk in, then add, and heat.

Serve with sweet potato croutons
